Mediterranean bell peppers hummus

Ingredients

  • For the hummus:
  • 80 mL (1/3 cup) Arom olive oil
  • 1 red bell pepper, seeded and cut into strips
  • 2 garlic cloves, peeled and cut in half
  • 540 mL (1 can) chickpeas, rinsed and drained
  • 30 mL (2 tbsp.) tahini
  • Juice of 1 lemon
  • Salt and pepper
  • For the garnish :
  • 60 mL (1/4 cup) pitted Kalamata olives, coarsely chopped
  • 60 mL (1/4 cup) crumbled feta cheese
  • 60 mL (1/4 cup) fresh parsley, chopped
  • 1 tomato, seeded and cubed
  • 60 mL (1/4 cup) Arom olive oil

Preparation

  1. For the bell pepper hummus:
  2. In a skillet, heat 15 ml of olive oil and sauté the bell pepper and garlic for 2 to 3 minutes. Set aside.
  3. In a food processor or with a blender foot, grind all the ingredients for the hummus, including the remaining oil and season.
  4. For the topping:
  5. In a bowl, combine all the ingredients for the filling except the olive oil.
