Mediterranean bell peppers hummus

Ingredients
- For the hummus:
- 80 mL (1/3 cup) Arom olive oil
- 1 red bell pepper, seeded and cut into strips
- 2 garlic cloves, peeled and cut in half
- 540 mL (1 can) chickpeas, rinsed and drained
- 30 mL (2 tbsp.) tahini
- Juice of 1 lemon
- Salt and pepper
- For the garnish :
- 60 mL (1/4 cup) pitted Kalamata olives, coarsely chopped
- 60 mL (1/4 cup) crumbled feta cheese
- 60 mL (1/4 cup) fresh parsley, chopped
- 1 tomato, seeded and cubed
- 60 mL (1/4 cup) Arom olive oil
Preparation
- For the bell pepper hummus:
- In a skillet, heat 15 ml of olive oil and sauté the bell pepper and garlic for 2 to 3 minutes. Set aside.
- In a food processor or with a blender foot, grind all the ingredients for the hummus, including the remaining oil and season.
- For the topping:
- In a bowl, combine all the ingredients for the filling except the olive oil.
